It came to me in a freak brainwave.
The Jaguar XK8 is a handsome car, but the engine is woeful.
Imagine this:
1UZ-FE + ITBs
W58 manual transmission
All in an XK8.
Put it on some stiffer lowering coilovers, install some sway bars, and
A EXHAUST.

Converting an XK to a manual requires you to rip out all of the electronics since the Mercedes computer freaks outs and shuts the car down if you change anything. It so bad that even Jaguar themselves couldn’t get a manual swap to work correctly. Also the same reason that there is a chronic lack of manual swapped Mercedes from the 00s

Until you want to wire up the lights or the gauges or the indicators or the temperature controls or the windows or the mirrors or you know anything electronic. Jaguar (and Mercedes for that matter) really didn’t want anyone swapping out parts in that era. Especially the engine and gearbox.
At some point all you’ll be left is with the body and at that point what are you even doing. Right old shame too since a manual XKRs or SL55s would be fantastic.

I’ve had the same thoughts with my 380SL. I’d love to swap its emissions choked boat anchor of an engine out for a late 90's 00's Mercedes engine or LS but the gauges are a mental block for me currently. Obviously I don’t want to end up with a hacked together cluster.
